Pesto Shrimp with Cheese Tortellini
 
This is one of those semi-homemade dishes… I’m totally recommending the pre-packaged tortellini and even the pesto sauce from the grocery if you’re in a pinch!  Quick quick quick! 

serves 4 for dinner

3/4 pound tiger shrimppesto shrimp

2 T olive oil

2T chopped garlic

Salt and pepper to taste

¾ cup pesto sauce

1 pound cheese tortellini, prepared

In a large pan, drizzle 2T of olive oil and turn your burner on medium high.  Cook the garlic until tender, then add the shrimp to the pan and sprinkle with salt and pepper.  Toss a bit to make sure you’ve got just a single layer and cook for about 2 minutes on each side.  Stir in pesto sauce and toss with the cooked tortellini.  Sprinkle with parm!  Serve with crusty bread, a green salad and white wine!  Fabulous dinner in less than 15 minutes, voila!
