One day last week we were inspired by not one, but three families who were shopping for ingredients for their signature seafood lasagna.  This recipe is the quick and easy version!

Serves 6 for dinnerfishy ingredients

Half pound Dungeness crab meat

Half pound bay scallops

Half pound salad shrimp

24 oz marinara sauce

8oz mozzarella cheese, sliced

6oz parmesan cheese, shredded

8oz ricotta or cottage cheese

Package lasagna noodles

Sprinkling of Italian herbs layering

Boil your lasagna noodles according to the package directions and set them aside.  In a fry pan, pour your marinara sauce in and turn it on medium high.  Add your bay scallops (the only seafood that isn’t fully cooked in our list) and simmer for about 4 minutes, or until the fish is cooked.  Get out a large lasagna pan and layer as follows: noodles, sauce and fish, ricotta, mozzarella and parmesan.  Oncedone! you have your lasagna built, give it a final sprinkle of the parm and lightly dust the entire thing with the dry Italian herbs.  Bake at 350 for about 45 minutes or until hot and bubbly.  Serve with crusty French bread and a crisp salad!
